Since I've been a bad blogger I have not one but two recently tried recipes for your viewing pleasure!
The first was one of Rachael Ray's famous burger recipes, it appeared in a recent issue of her magazine and she also made it on her daytime television show and I knew I had to make the Adirondack Red Wing Burgers. These were absolutely delicious. You can find the recipe here. The only change I made was I left out the dill but only because I thought we had some in the spice cabinet and it turned out we didn't. Next time I'll remember to pick up some. I loved the addition of the relish on top and using an English muffin instead of a bun. YUM!
The next recipe I made just tonight, not even two hours ago! It is appropriate that I made this particular recipe on the night before my dad's birthday because this sauce is one of his favorites!! I made Penne Alla Puttanesca. This particular recipe was featured in the May 2010 Food Network magazine but it is one of Mario Batali's from his new book which I will most definitely be getting! Another funny thing about Puttanesca sauce - when my mom used to make this for my dad when I was a kid I would never eat it. I didn't like anchovies, I didn't like capers, I didn't like olives and I didn't like anything with red pepper flakes - oh what a difference twenty plus years makes because tonight I absolutely loved everything about this dish. It was so yummy and quick and easy. You can find the recipe here. It is from the Martha Stewart site but I checked it against the recipe that I pulled out of the Food Network magazine and they are the same. The only thing different I did was I didn't use salt packed anchovies and capers they were packed in oil because that's what they had at the grocery store. I also used kalamata olives and since I just decided to make this dish right as I was leaving to pick up Mike I didn't soak the capers over night either. I soaked them and rinsed them while everything was cooking and it tasted pretty delicious.
I have been a busy bee working for the past eleven days on the Layout a Day workshop I joined. I'm having so much fun creating layouts every day. I wake up and check out what the challenge is for the day and then I start creating. So far I've tried new things, told stories I've been meaning to tell and I'm meeting some new online friends. I haven't finished my Week in the Life album yet but I will be sure to post pictures as soon as I do. In the meantime here's a sneak peak at a couple of the layouts I've done over the past eleven days.
